Dominic & Debra Davies

Owner

Dominic and Debra have channelled over 30 years of ownership in restaurants, bars and dance clubs into The Cotton Club. Dominic, an avid skier, moved from the Australian Alps to Cairns for the summer in 1989 and fell in love with the tropics and a beautiful woman named Debra. They invested in their first bar and restaurant within a year and have never looked back.

Michael Hutchings

Executive Chef

Chef Michael Hutchings is emerging as one of Australia’s best young chefs having finished as a finalist in 2022 Queensland Chef of the Year and Finalist in Australian Chef of the year 2023.

He describes the venue as a Gastro Pub and what sets The Cotton Club apart is the attention to detail. You will be surprised at the quality, taste and presentation, particularly given the price point.

This Irishman learned from one of Europe’s best chefs, Michael Deane of “Deane’s on Queens,” a well-known Michelin-starred restaurant in Belfast.
